It is said that the Walnuts Sauce has Persian origins and that it arrived in the Italian Riviera during the era of Maritime Republics. Over time it has become a recipe typical of Ligurian cuisine.

This creamy and tasty sauce is traditionally used in Liguria as condiment on pasta dishes, preferably freshly made pastas. For the correct use, delute sauce with fresh heavy cream and butter or alternatively with just a little bit of cooking water. Add a bit of Alberti extra virgin olive oil to garnish your dish.
